The latest in Civilizr’s “We’re not vegan, but we do enjoy a good plant-based recipe” collection is Power Plates: 100 Nutritionally Balanced, One-Dish Vegan Meals by Gena Hamshaw. The book includes over a hundred recipes that are balanced and focused on macronutrients, so you can eat healthy and still feel full thanks to the inclusion of healthy fats and plenty of plant proteins (“plenty of plant proteins” is fun to say, isn’t it?) and a variety of grains so you don’t get bored.
We very much enjoyed a recipe for rice and beans with tofu and greens that was savory and could be prepared in a single pot. That additional measure of convenience is a common thread with many of these recipes, and there are also tips for cooking ahead on the weekend as well as taking food on-the-go.
